Position Overview & Specifications

Job Title: Skilled Sri Lankan Chef

SOC CODE: 5434
Job setting/location: restaurant in London Salary: £26,000 (based on 39 hour per week) permanent full time Description: This is a very challenging and highly skilled role requiring specialty culinary expertise with 5 or more years of experience with necessary excellent skills and creativity to cook the ethnic traditional meals.
The key duties of the role are:

  • prepare and produce traditional Sri Lankan specialty non-vegetarian (including Venison fry, Deer curry, Rabbit curry, Lamb intestine fry) vegetarian, Sea-food dishes, snacks and desserts using coconut.
  • prepare food from scratch including restaurant's own masala, marinade, sauces and batter from ingredients
  • initiate a ‘Hopper’, ‘String-hopper’, ‘Kothu-roti’ and ‘Pittu’ buffet on certain days and special occasions by preparing variations with meat, poultry, seafood and vegetarian.
  • plan the menu and update from time to time according local and seasonal produce, customer needs and demands
  • consider and prepare meals carefully by using his own skills in making variations or alterations to ‘nut-free’ and allergic conditions
  • ensure efficiency in the kitchen, and the high standards and reputation of the business is maintained
  • ensure up to date with relevant training and courses regarding hygiene and food safety management
  • manage and control the food portion, stock that is used for production, including ensuring all stock is stored appropriately
