Job Introduction

Sodexo Live have an exceptional opportunity for a Retail Bars and Beverage Operations Manager to join our first class team at Ascot Racecourse!

You will be working as part of the team at the iconic Ascot Racecourse where we are committed to providing our guests with an outstanding experience whether they come to race, hold a business meeting, or host a private dinner at our world-class venue.

As a main focus area of the client, Retail Bars are a key deliverable to maintain the reputation of Ascot among the wide customer base and by utilising your knowledge and experience you will bring a service of excellence to our customers.

Ascot strives to continuously improve and innovate to offer a food proposition that is market leading for both the Events and Racing segment. You will work with the Retail Operations Manager to bring the best in class to Ascot.


Main Responsibilities

Ascot strives to continuously improve and innovate to offer a food proposition that is market leading for both the Events and Racing segment. You will work with the Retail Operations Manager to bring the best in class to Ascot.

You will:

  • Manage all retail beverage operations, in line with the retail strategy
  • Support the Retail Operations Manager: Food to ensure consistent delivery of service for all race days and key events
  • Ensure all bars are set up according to the agreed SOP’s and delivered operationally
  • Work with the Head of Retail to oversee the setup, breakdown, equipment and general logistics for the retail beverage units
  • Manage the execution of the Retail Beverage Operation on race days and key events
  • Manage the execution of innovative beverage offers and defining our Signature Serve premium drinks
  • Drive delivery and profit from our beverage proposition
  • Ensure the safe working practices are maintained within the Retail Beverage Operation
  • Ensure all units, including concessions are compliant with Food Safety and Health and Safety legislation and that appropriate records are completed and retained for audit purposes
  • Be responsible for the labour spend within the Retail Beverage Operation, including planning, forecast and review of actuals to identify anomalies and justify overspend
  • Work with the Head of Retail, developing new and innovative concepts and product offers, through SOP’s and training to the point of delivery
  • Work with the Ascot Marketing team to ensure that all offers are marketed and analysed
  • Support the Head of Retail with financial information required to run the overall Retail account
  • Manage and deliver the annual retail CAPEX plan, in conjunction with ARL’s overall CAPEX
  • Support the Head of Retail with all operational processes, ensuring business objectives and statutory needs are met in the most economic and efficient manner
  • Work with the beverage team to determine par stock & ordering levels
  • Manage the beverage concessions
  • Ensure the retail operation is allergen compliant
  • Support key event dates at Ascot and the wider business, as required
The Ideal Candidate

You will have held a similar position in hospitality and have extensive beverage management gained within a multi-unit site. You will be a confident communicator with exceptional verbal and written communication skills and have experience of managing diverse teams in a fast paced environment.

You will also have-

Essential

  • Knowledge of cellar management
  • Experience of working to tight deadlines
  • Experience of working with an EPOS system

Desirable

  • Experience of working with third party contractors / suppliers
  • A comprehensive knowledge of Food Hygiene and associated Food Legislation and Best Practice
  • H&S Food Hygiene Qualification Level 2
  • Knowledge of fine Wines, Champagne & Spirits
